      <image:caption>During the summer, I led the redesign of the menu at Mazûl, a restaurant whose cuisine is an ode to the ancestral and a tribute to Native American cooking, reinterpreted through a contemporary lens. Located in the Salesas district, in the heart of Madrid, Mazûl is conceived as a sensory refuge where gastronomy transcends the plate to become a fully immersive experience. In November, Mazûl was nominated for the Gastrolab Spain Awards 2026 in the category A Celebration of Mexico in Madrid, in recognition of its outstanding contribution to the promotion and elevation of Mexican gastronomy abroad. According to Heraldo Media Group, the awarding institution:“The commitment, creativity and passion with which Mazûl promotes the flavours, techniques and ingredients of Mexico in Spain represent a valuable effort to keep our culinary identity alive and project it to the world.”</image:caption>

      <image:caption>Después de una larga trayectoria en Dirección y Consultoría Estratégica de Negocios, en la que destaca mi trabajo con importantes fondos de inversión en proyectos de Reestructuración, Fusiones y Adquisiciones, decidí volver a cocinar siguiendo mi fascinación por la Nueva Cocina Nórdica. En el año 2016 me mudé a Copenhague dónde me forjé en las cocinas de los reconocidos restaurantes NOMA y 108. Allí aprendí técnicas como la fermentación, la intensificación del sabor, y la filosofía de la Nueva Cocina Nórdica.</image:caption>

      <image:caption>De vuelta en Madrid me dediqué a profesionalizar, reestructurar, optimizar las operaciones y a crear estándares de calidad en grupos de restaurantes de renombre como Sala de Despiece y Grupo El Pradal. Posteriormente , tras realizar Matter, una experiencia gastronómica pop-up en We Crave Design, me incorporé como socio estratégico y Chef+Innovation Strategist. Allí mi labor se centró en la dirección estratégica del estudio, en el diseño de conceptos de Gastronomía Experiencial y en el fomento del concepto de Gastrodiplomacy, la unión de culturas a través de la gastronomía.</image:caption>

      <image:caption>Después de conocer de cerca a la comunidad del Food Design, me di cuenta del gran potencial del diseño para encontrar soluciones eficaces para crear y mejorar los ecosistemas del sector agroalimentario. Fue en ese momento cuando decidí empezar a ofrecer nuevamente servicios de consultoría estratégica, esta vez, centrada en hostelería y food design. En febrero de 2021 me uní con Antonio Barrera, el creador de Food Design Festival, para fundar  Singular Foods, un hub de innovación alimentaria, donde fui Food Designer y Estratega.</image:caption>

      <image:caption>Durante el verano lideré el rediseño de la carta de Mazûl, un restaurante cuya gastronomía es una oda a lo ancestral y un homenaje a la cocina nativoamericana reinterpretada desde una mirada contemporánea. Ubicado en el barrio de Las Salesas, en el corazón de Madrid, Mazûl se concibe como un refugio sensorial donde la cocina trasciende el plato para convertirse en una experiencia profunda y narrativa. En noviembre, Mazûl fue nominado a los Premios Gastrolab España 2026 en la categoría Una celebración de México en Madrid, en reconocimiento a su destacada labor en la difusión y enaltecimiento de la gastronomía mexicana en el extranjero. Según Heraldo Media Group, institución otorgante del galardón: “El compromiso, la creatividad y la pasión con la que Mazûl promueve los sabores, técnicas e ingredientes de México en España representan un valioso esfuerzo por mantener viva nuestra identidad culinaria y proyectarla hacia el mundo.”</image:caption>

      <image:caption>Cuando vi sus Shekerbura, unas empanadas de nueces decoradas detalladamente con una pinzas llamadas magash, me quedé soprendido. En nombre de este plato viene del turco Seker-Borek, que significa empanada dulce. Las Sherkerbura, las Paklhava y los Shor-Gogal son platos que se preparan para el Novruz, una celebración de la primavera en Azerbayán. Según cuenta la leyenda la forma de una Shekerbura representa la luna, la forma redonda y el color amarillo del Gogal representa al sol, y la forma de diamante de la Paklhava representa a las estrellas.</image:caption>

      <image:caption>En ese momento, se me ocurrió hacer un evento piloto y aprovechar el espacio de Altered by We Crave los domingos, día en el que permanece cerrado. Seguimos conversando y mi interés creció más, ya que Fina, llena de pasión y cariño, se ha dedicado a proteger el legado de su cultura y promover la gastronomía azerí, recopilando recetas antiguas y tradicionales de familiares y conocidos. Fue entonces cuando le sugerí hacer un evento y le pregunté si me enseñaría a preparar sus platillos. Este fue el comienzo de una  nueva aventura gastronómica y de una preciosa amistad. En esta ocasión contamos con la colaboración y el apoyo de Fernando Castro, nuestro amigo que además de ser un experto barista, es un artista con la fotografía.</image:caption>

Utilizamos ingredientes que había recolectado y conservado su madre, como las hojas de parra, que venían saladas y cuidadosamente dobladas en pequeños paquetes. Éstas las usamos para hacer Dolma, cuya elaboración podemos apreciar en la siguiente galería.</image:caption>
